The EVOO we use for our production is obtained cold by mechanical processes, the difference lies mainly in the degree of acidity, which is less than 2° and the median of defects has to be less than 3.5. Ideal to accompany toast, grilled cod, roasted vegetables or simply to add a touch to fried potatoes.
